10 Simple, Scrumptious, Spring Seafood Recipes

Spring Into New Recipes

Spring recipes are some of our favorites – whether it’s grilling a filet of fish, whipping up finger foods for a warm-weather picnic, or grabbing something to go from the grocery store.

Seafood is a great option for warmer weather because it’s fresh, easy to cook, and most fish pair perfectly with seasonal produce only available in the spring. Even though we’re moving away from soups, pot pies, and casserole dishes doesn’t mean we can’t incorporate sustainable seafood into our spring-inspired dishes.

Try these delicious dishes and don’t forget to eat seafood at least twice a week!

1. Air Fryer Fish Tacos with Avocado Salsa

 Tex-Mex food doesn’t have to feel heavy or be high in calories. And nothing is more Tex-Mex than tacos and salsa – all made easier in the air fryer.

2. Dijon Roasted Salmon Filets

This Dijon Roasted Salmon Filets recipe goes from fridge to table in about twenty minutes. Pair with a side salad, rice or couscous, and your favorite green vegetable, and you have a delicious dinner in minutes.

3. Baked Lemon Garlic Caper Sea Bass

7. Easy Crab Cakes

Seafood Nutrition Partnership Names Sarah Crowley to Lead National Seafood Campaign Initiative

Seafood Nutrition Partnership (SNP) is pleased to announce that Sarah Crowley has joined the organization as Vice President of Marketing and Communications. Sarah is an experienced marketing professional who began her career at Hill, Holliday advertising agency and went on to lead marketing teams at major national brands including Fidelity Investments, Staples, specialty meats company Kayem Foods and responsible grass fed beef company Verde Farms. SNP is very excited to tap into her retail and brand marketing experience to drive SNP’s mission to communicate the public health benefits of seafood and to encourage US consumers to eat seafood at least two times a week per the U.S. Dietary Guidelines. Sarah will spearhead the national seafood promotion campaign initiative in collaboration and input from the NSC Task Force and SNP stakeholders.

“We are honored to have Sarah Crowley on the SNP team,” said Linda Cornish, president and founder of Seafood Nutrition Partnership. “We look forward to Sarah’s leadership as she leverages her immense marketing expertise to support our next decade of impact.”

Seafood Nutrition Partnership Announces 2023 Board of Directors

The Seafood Nutrition Partnership (SNP) is pleased to announce new leadership of its Board of Directors for 2023-2024 with the appointment of Paul Doremus, Vice President for Policy and Sustainability Strategy at Trident Seafoods, as Chair of the Board and Jason Driskill, H-E-B Vice President of Seafood, as Vice Chair. Judson Reis, formerly of Gorton’s Inc., will remain as Treasurer and Linda Cornish serves as both President and Secretary of the Board. Joining the board in 2023 is Morgan Howard, Owner of Morgan Howard Productions and a Board Member of Sealaska and Gustavo Lara, Commercialization Manager for Seafood at Cargill.

“I’m honored to Chair the Seafood Nutrition Partnership as it begins its second decade of impact around the health benefits of seafood,” Doremus said. “We have a phenomenal and committed Board and exceptional execution on the mission led by Linda Cornish.” 

Rolling off the Board at the end of 2022 are 2021-2022 Chair, Jim Motos, Rich Products’ SVP, Category Business Units, as well as Board members Jacqueline Claudia and Nelson Griffin. All three will move to Board Emeritus status.

“This is one of the best Board experiences I have had, and the caliber of the Board of Directors is exceptional,” Motos said. “It’s bittersweet that I am rolling off the SNP Board. I am confident in the leadership of the SNP led by Linda Cornish and Chaired by Paul Doremus.”

The Executive Committee members of SNP’s Board serve two-year terms and guide the direction of the nonprofit on a mission to inspire a healthier America through seafood.

Happy National Nutrition Month!

Each year, the Academy of Nutrition and Dietetics emphasizes the importance of making healthy and informed decisions when it comes to food in order to develop sustainable eating habits. National Nutrition Month takes place every March and the theme for this year encourages consumers to fuel their future when planning meals and snacks. Eating with sustainability in mind is a way to nourish ourselves during every phase of life and also protect the environment.

There is no better time to make informed food choices and develop sound eating and physical activity habits. Fueling for the future means eating with the environment in mind. Choose seafood that is in season and select foods with minimal packaging. 70 percent of the Earth’s surface is covered by water yet only 2 percent of the world’s food supply comes from the ocean. Seafood is one of the most sustainable proteins on the planet if sourced responsibly, so we should look to the waters to feed the planet.

In order to have a sustainable supply of seafood for future generations, it needs to be caught or farmed using environmentally and socially responsible methods. Look for sustainable seafood certifications and oversight programs on the packaging. These mechanisms ensure a safe, healthy, and accountable food supply.

Another way to fuel our future is by planning meals. Take stock of what is in your pantry to use what is on hand before making a trip to the store. At the grocery store, bring a list and take advantage of sales. Remember, seafood comes at all price points.

Some quick tips for deals:

Check seasonality – for example, fresh Alaskan salmon is cheaper in early summer when the fish are running. Farmed fish is always in season.

Many sustainable species can be found at great savings – look for frozen cod, flounder, Alaska pollock, salmon, shrimp, mussels, and canned tuna and sardines.

Buy in bulk and freeze.

Skim weekly sales and clip coupons.

U.S. News & World Report: What to Know About Cooking Seafood

Most Americans don’t eat enough fish and miss out on the health benefits of seafood, especially omega-3 fatty acids. Seafood omega-3s are especially valuable for pregnant women, infants, and children because of the documented brain development and eye health benefits. U.S. News & World Report reached out to SNP to learn the best ways to purchase and prepare it.

“People tend to feel intimidated when it comes to cooking seafood at home, but it’s quite easy,” said Jessica Miller, SNP’s nutrition communications manager, a nonprofit organization that is addressing the barriers to eating seafood, including a lack of confidence in buying and preparing seafood.

“As with most seafood, you do not need a lot to make it taste delicious,” added Miller, who recommends a simple preparation of a little oil, salt, pepper, and a squeeze of lime.

Princeton Alumni Weekly: Sea Change

Eric Pedersen, Princeton c/o ’82, wants to revolutionize the seafood industry and forge a new way to farm fish out of his one-of-a-kind factory in Waterbury, Connecticut.

Almost a quarter-century ago, Peter Drucker, management savant, economist, and visionary, reminded the world that while water may cover two-thirds of the Earth, that doesn’t mean the supply of fish is inexhaustible.

Linda Cornish, president and founder of Seafood Nutrition Partnership, a nonprofit group that promotes the consumption and health benefits of seafood, says that seafood sourced from wild capture has remained steady since the 1990s and that the growth in seafood supply is almost entirely from aquaculture.

“We need good management practices for both wild and farm to make sure [the supply] is grown responsibly and sustainably,” Cornish says. “There are a lot of different aquaculture technologies that are in place now, [but] the biggest challenge is improving the perception of aquaculture.” Farming, Cornish insists, should not be a dirty word.

Seafood Helps Those Winter Blues, Research Shows

Combating loneliness during the cold and lonely months of winter can be difficult, but seafood can help! Research shows the omega-3s found in seafood can support your brain through bouts of loneliness.

Social isolation affects the activation of our serotonergic pathways—but omega-3 fatty acids (specifically EPA and DHA, found in seafood) and vitamin D both have an important role in the actions of these pathways and are thus, critical nutrients for everyone, but especially people who are dealing with loneliness. According to a 2015 review published by the Federation of American Societies for Experimental Biology, vitamin D, EPA, and DHA all help regulate the production, release, and function of serotonin. To ensure optimal production and use of serotonin, maintaining healthy levels of both vitamin D and omega-3s through choosing seafood is vital.
