Pollack is a pelagic fish that swims in shoals as well as a bottom-dwelling fish. Its behavior and appearance are similar to that of the saithe, but it is distinguishable by a projecting jaw. It can be found at depths ranging from 0 to 200 meters. Pollack is a delectable fish that is typically captured as a bycatch when fishing for cod. The flesh has a robust texture that lends itself perfectly to frying and poaching. Pollack is a popular recreational fishery species in Norway.
