Scallops are distinguished by the presence of two flavors and textures in a single shell: the meat, known as “scallop,” which is firm and white, and the roe, known as “coral,” which is soft and often brilliantly colored reddish-orange. Markets occasionally sell scallops already prepared in their shells, with only the meat remaining.
